I love summer time! The whole entire vibe that exists during your everday life during the summer is what keeps some people going year round. You’ve got the sun shining and being ever so generous with that vitamin D, you’ve got people outside training, hunnies at the beach and most importantly that grill is fired up and ready to manifest some serious nomz!
So today, I’m feeling that a post on some lean and tasy meals is most appropriate! Keep reading to find out how to Â liven up your lunches and dinners. In particular, we’ll focus on my clean eating staple food: Chicken.

Making Your Chicken More Interesting
Chicken breast is one of the best lean muscle foods you can eat because it’s low in both calories and fat (if you’ve removed the skin, of course)… and yet it’s high in protein. It’s the bodybuilder’s and health-conscious person’s best friend.
You can get a little tired of eating chicken day after day, especially if you’re just eating plain chicken breast with a side of vegetables and brown rice like i do several times a week. Below you’ll find all sorts of ways to make your chicken more interesting…
Chicken Sandwiches: This is a nice change of pace if you usually just eat chicken breasts. Here you can get your carbs with whole wheat bread or toast. You can make your sandwich even more tasty by adding lettuce, tomato, sprouts, and/or cheese.
Chicken Soup: Don’t buy canned chicken soup, because that’s too processed. Instead, make your own chicken stock by boiling chicken. Then add celery, rice, pepper and other seasonings for taste.
Chicken Salad: Instead of eating plain salad, dice up your chicken breast and toss it on your salad. You may want to add sunflower seeds or peanuts for texture.
Chicken Stir Fry: Here you can use a small amount of stir fry seasoning (like the packets you buy in the store), or you can use a bit of soy sauce. Here’s a recipe:
- Four chicken breasts, chopped into bite-sized pieces
- One green pepper, chopped up
- One red pepper, chopped up
- One small onion, chopped up
- Half a pack of chopped mushrooms
- One bunch of broccoli crowns
- Soy sauce to taste
- Extra virgin olive oil
- (Feel free to add any other vegetables you enjoy.)
Use a wok or a frying pan to brown your chicken using a small amount of olive oil. Add soy sauce or stir fry seasoning to taste. Then add your vegetables to the wok or frying pan to lightly fry. Serve over a bed of brown rice.
Chicken and Rice Casserole: Put a 3/4 cup brown rice and a 1/4 cup wild rice into a casserole dish. Mix together with mushroom soup. Cut up chicken breasts into strips and lay across the top. Add paprika and pepper. Bake in a 350 degree oven for 35 minutes.
Marinate the Chicken: Another way to make your chicken more interesting is to marinate it. For example, soak it in fresh lemon juice and pepper for a few hours before cooking. Or soak it in Italian dressing or your favorite beer.Â
Grill Your Chicken: You need to be careful with this method so that your chicken doesn’t get too dry. You may want to pre-bake the chicken until it’s almost done, and then transfer it to the grill to get that grilled, smoky taste.
