This chicken and brown rice bowl recipe is a favorite of mine because it’s ridiculously simple & cost effective.
1 boneless skinless chicken breast
1/4 cup olive oil
2 Cups Water
Boil the brown rice until desired texture is reached.
Put a small amount of water in the pan and cook the chicken on medium covered with a lid.
Continue to occasionally flip the chicken until there is no pink.
Cut up and add a 1/3 cup olive oil to lock in the moisture at the end(you dont want to expose olive oil to high heats) and or add a small amount of Yoshidas and enjoy.
Note: Sometimes I will add chopped spinach, onions & carrots to the rice.
